Peanut Butter Mocha Cupcakes

Protein 9.6g Calories 298 Fat 24.1g Carbs 11.16g

INGREDIENTS

  • 1 Medium  bananas
  • 1 Scoop Pure and Simple Quattro Protein
  • 1/3 Cup Cristco Vegetable shortening
  • 1/4 cup coconut flour
  • 1/3 Cup natural peanut butter
  • 1 tsp vanilla extract

ICING

  • 1 tsp. Chocolate Stevia (Coco powder optional )
  • 2 tsp. Coffee black
  • 1/3 Cup Cream cheese low fat

DIRECTIONS

  1. Blend with mixer all cupcake ingredients. Scoop out mixture and place into cupcake wrappers. Remember the mixture will be a little on the thicker side this is normal 🙂
  2. Bake at 350 for 20-25 mins or until golden brown.
  3. In separate bowl blend with mixture cream cheese, coffee and chocolate stevia powder. Set in fridge until cupcakes are ready for icing. Add crushed peanuts on top (optional)
All nutritional info is based on one cupcake with icing. Recipe makes 6 cupcakes.
